Cinnamon Streusel Chocolate Chip Banana Muffins

Cinnamon Streusel Topping
- ¼ Cup Butter melted
- ⅓ Cup Flour all purpose
- ½ Cup Light or Dark Brown Sugar packed
- 1 Tsp Cinnamon
Chocolate Chip Banana Muffins
- 1 ¾ Cups Flour all purpose
- 1 Tsp Baking Powder
- 1 Tsp Baking Soda
- ¼ Tsp Salt
- 1 Tsp Cinnamon
- 3-4 Ripe Bananas
- ½ Cup Butter melted
- ½ Cup Light or Dark Brown Sugar packed
- ¼ Cup White Sugar
- 2 Eggs
- 2 Tsp Vanilla
- 2 Cups Chocolate Chips Milk chocolate or semi-sweet
Cinnamon Streusel Topping
Melt butter in a medium bowl.
Add brown sugar, flour, and cinnamon.
Mix well until combined.
If too dry, add more butter. If too wet, add more flour to reach the desired consistency.
Muffins
Preheat oven to 375 degrees.
Mash ripe bananas in a large mixing bowl and set aside.
Combine dry ingredients in large mixing bowl (flour, baking soda, baking powder, salt) and mix. Set aside.
Combine wet ingredients in a large mixing bowl (melted butter, brown sugar, white sugar, vanilla, eggs) and mix.
Add mashed bananas to wet ingredient mixing bowl.
Add dry ingredients to wet ingredient mixing bowl.
Mix to incorporate, but be careful to not overmix.
Add chocolate chips and mix until just combined.
Add batter to muffin tins and top with cinnamon streusel topping.
Bake at 375 for 17-20 minutes (watch to make sure the streusel topping doesn't burn).
